Between the monitor being able to use the power from the video cable itself to trigger *some* sort of ping from the monitor (even if it's just a "Yup, I exist!" return), and Windows Update adding enough extra code to build a decent 3D game of Mahjhong, the NUC probably decided to start making sure the monitor was there.
Granted, it's supposed to run headless, but just because it's supposed to doesn't mean it accepts the setting.

Now if you'll excuse me, I've got a cat to go torment for attacking the dog again.
