If it is really what you want to do, then by all means pursue it. Just be aware that the job market may be very different by the time you're ready to enter the workforce after training. The usual difficulties in being hired with no experience will also apply.

I also don't recommend picking an academic or technical training program based on current employment markets. The lag between when you'll actually graduate and be employable often eats the job market. (The people in the pipe ahead of you take the jobs.) The for-profit academic/technical training industry understands this and uses it to its advantage. As I understand it, pharmacy tech training programs are also highly variable in their quality.
