While cattle are notorious methane producers & can certainly be tracked via scent quite easily, *HE* isn't that stinky.
You could track his Cow fairly well, but given the Master & Familiar can be up to 1 Mile apart & still function, you may find that your ultra stealthy stalky sneaky trick of readying to pounce on the stinky thing leads to a mild chuckle from behind you just before a Combat Shovel impacts the side of your skull.

As for the pit trap, that's pretty much usefull on anyone not an attentive Rogue.
But given he's armed with a shovel, he'd probably use it to sculpt stairs in the walls, walk out, and fill in the hole.

His Cow would probably cast Levitate the moment he felt himself fall, sit there a moment hovering, then fill in the hole with poop.
Ewwwww...
