A good number of our current cultivars, including ones certified as organic and GMO free, have been created through exposing seeds and plants to mutagenic chemicals or various kinds of radiation. This has been done for decades. To me the larger issue is not how we're tampering with the genetics of our food crops, since we've been doing that throughout recorded history. No, the issue is with patents and licenses for these things. That's where things start to get ugly ...
