Leftovers from my friends' house last night, where I went for dinner and Super Bowl viewing.
Pork ribs (Costco has pretty good ones), smoked with applewood and a dry rub of salt, pepper, brown sugar, and garlic, then put back into the smoker for a bit of lower heat to "loosen then up".
He is a master of the smoker. They were "falling off the bone" tender (literally, first bite I took, the bone fell out, and they were all that way) and the best BBQ I have ever tasted in my life. Also au gratin potatoes, some sort of light puffy rolls, and BBQ beans.
He sent a small rack home with me vacuum-packed in one of those bags you can get for the vacuum-sealing machines. Stuff, suck, and cut.
Eating the leftover ribs now. OM NOM NOM NOM NOM NOM.
The meat is firmly on the bone, since I couldn't wait to heat them up, so I'm eating them cold.
Ain't NOTHING wrong with these ribs cold. |
