Serves two.

Ingredients:
- Peanut oil. Any other oil with a high smoke point (NOT olive oil) works, but peanut oil makes this dish way more awesome.
- 1 cup long grain rice. Duh.
- Two handfuls each of frozen peas and corn.
- Half an onion
- Soy sauce
- 1 large egg

1) Boil one cup of long-grain rice. While that's cooking...
2) Put some oil in the bottom of a large pan (or better, a wok) and turn on the heat. Once hot, crack the egg into the oil, and stir vigorously until the egg has finished cooking and the pieces have a soft, rubbery texture.
3) Remove the egg and put it aside. Add a little more oil, and saute the onions in it four a couple of minutes.
4) Add the two handfuls each of frozen corn and peas. Continue to saute until the vegetables have heated through - a couple of minutes or so.
5) Re-add the egg. Drain and add the (now cooked) rice.
6) Add soy sauce to taste - you want a reasonable quantity, probably around 20-30ml. Stir thoroughly until everything is well mixed.

Serve on its own or with meat.

The simplicity of the ingredients belie just how delicious this is when it's done. :)
