I've been doing some more research and have discovered that there was quite a discussion having to do with the "NetworkManager" daemon and not reconnecting to known wireless networks with hidden SSIDs. There's a fix listed on Red Hat's bugzilla Fedora forums for Fedora 15, but I'm running on 14.

I guess I'm going to have to learn a little more Linux now that I have a machine that I can destroy if I screw something up.

Not sure what your problem is with wireless on Win7, but I've had no problem with any install that I've done where I've set that particular setting ([P|V]ista or Win7. Windows fussed at me but went ahead and set the option.
