Take your b/s level immediately before eating.
Take your b/s level 2 hours after taking your first bite.
Your body takes 2 hours to react to the increased sugar levels, produce insulin and start processing the sugar into your muscles.
Take it too soon (say, 1 hour after starting to eat) and your number will be artificially low (because it's still rising).
Take it too long (say, 3 hours after staring to eat and your number will be artificially low (because your body is processing it already).
What affects your sugar level directly: carbs.
What helps reduce spikes in your sugar levels by binding to the carbs: soluble fibre. (Insoluble fibre helps keep you regular.)
What you ate that would bater your levels:
Turkey - protein. No problem.
Sub bun - carbs.
Doritos - carbs.
Cadbury egg - carbs.
Root beer - carbs.
For a diabetic, as I understand it, you should be aiming at having 45-60g of carbs per meal. For stuff with nutrition labels, it's easy to tell how much carbs are in a given serving -- read the label. Take the total carbs value and subtract the fibre portion.
Between meals, if you're going to snack, have a piece of fruit, or protein (meat, fish, nuts). They won't affect your b/s level.
