...when I use beans (or peas), I soak them for 12, rinse, add water, then bring them to a boil, then leave sit for 1 hour -- and THEN I start adding stuff. I don't add salt (but do add 1/2 tsp of baking soda to cut gas) until I start adding spices and meat.
