If you use a gallon carboy (I get mine at the Apple Barn, a cider manufacturer at the local mall -- $4.99 for a gallon glass jug that happens to be full of cider!), fill it with however much honey and water and whatever, then add a yeast packet that contains as much as you would put in 5 gallons of must, it will actually ferment quite a bit faster. In my experience, though it varies with what you are fermenting, you will see it work approximately 50% faster than if you work in a 5-gallon batch.

#2 is what I like to do, though. :-)
