For some reason, the anti-grav tech only works facing away from the sun (because it provides the "heating" for the side facing away from teh sun, too).

And using the Mobius strip is done to use the whole surface of the world, not just the side facing the sun. Because... because the galaxy's most lusted-after delicacy requires a perfect day/night cycle to be actually tasty, making the investment into a Mobius strip world worthwhile. Especially since the delicacy's home world was devasted in the War of 66.
