I would probably not use the mayo at all. It might get in the way of the mustard flavor :) I really like mustard - especially Dijon style. I would probably use cheese between the bacon and turkey as well, keeping it where you have it also (two layers of cheese!) Maybe using something complimentary, not sure what off the top of my head, though. I can't recall the taste of Gruyere cheese to think of something to compliment it well at the moment.
