  Two basic muffin recipes by morenna 2008-10-01 17:23:07
All-Star Muffins
Makes 16 large muffins

3 1/2 cups (14 ounces) unbleached all-purpose or cake flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
8 tbs (4 oz) butter
1 cup (7 oz) sugar
3 large eggs
2 tsp vanilla extract
1 cup (8 oz) sour cream

Preheat oven to 400 degrees F. Lightly grease 16 muffin cups or use paper liners.

In a medium-sized bow2l, whisk together flour, baking powder, baking soda and salt, then set aside.

In a large mixing bowl, cream the butter and sugar together until light and fluffy and almost white in color. Scrape down the bowl to make sure all the butter is incorporated, then add the eggs, one at a time, beating well after each addition. Add the vanilla adn the sour cream and mix until incorporated. Add the dry ingredients and mix on low speed just until the batter is smooth. Fill muffin cups and bake 18 to 24 minutes, until a cake tester inserted in the center comes out clean. Remove them from the oven, cool in the pan for 5 minutes, then remove the muffins from the pan to finish cooling on a rack.

Basic P.D.Q Muffins
Makes 12 muffins

2 cups unbleached all-purpose flour
1/2 cup sugar
1/2 tsp salt
1 tbs baking powder
1 cup milk
1/4 cup vegetable oil or butter (softened)
2 eggs

Preheat oven to 500 degrees F

Blend together the dry ingredients as long and vigorously as you'd like. Beat the liquid ingredients together (milk, oil and eggs), until they are light. Pour the wet ingredients into the dry. Gently blend them together just until mixed. It's ok if there are some lumps.

Fill the cups of a lightly greased, 12-cup muffin tin 2/3 full. As soon as the muffins are in the oven, drop the temperature to 400 degrees F. Bake for 20 minutes or until golden brown.
