Aren't you after the concept of inside and outside? Nah, nevermind, I'll just keep answering.

Normally, I don't need to know if I'm seeing the manufactured surface. Maybe so I could tell if I had pre-made half-bricks of uniform size or just broken brick pieces. Here we go...I would rely on my previous experience with bricks if I can't break a brick to check. I would also look for chips on the bricks since I've never found a batch of perfect bricks. How important is getting the right answer? Will the mortar not adhere to some surfaces?
