          The Udon noodle soup is easy to make by Classic_Jon 2008-08-27 10:20:59
and really very tasty and good for you.

1lb of Chicken breast cooked and shredded.

2 large (32oz size) cartons of chicken broth (Organic if possible)

Approx 2 cups Sliced medallions of baby Carrot

Approx 2 cups sugar snap peas cut into 1" sections

Chop 2 shallots into 1/4" sections

Several grinds of pepper medly (to taste)

Several grinds of sea salt (to taste)

Dash of lemon pepper and garlic salt

One "squirt" of Sriracha chili sauce. (to taste)

One bundle of Udon or Soba Noodles.

Directions:
Cook the shicken and cube and then shred. Cut up veggies and add them and the spices to a stock pot with the chicken broth simmering in it and cook them down for a few minutes until tender. Add Chicken and allow chicken to warm up.

Cook udon noodles per directions and allow to cool. Do NOT add the Udon or Soba noodles until just before you are ready to serve. Keep the noodles seperate.

If you are taking it as a lunch keep the soup and the noodles seperate untill you are going to heat them and then add the noodles right before you warm it up. It travels very well that way :)

Took me a couple of tries but I think I have got a winner in this one. :)
