* 5kg honey
* 1kg dark malt extract
* 1kg light malt extract
* 50g Saaz hop pellets
* Large sprig of rosemary
* Large sprig of marjoram
* Belgian abbey-style yeast
* Yeast nutrient

Bruise herbs, cook with hop pellets for 3/4 of an hour in 2 litres of water.

Add honey and malt extracts to 30 litre fermenter with 20 litres hot water.

Strain herb/hop extract into fermenter when cooked, stir well.

When temperature has reduced to below 30 degrees Celsius, stir in yeast and yeast nutrient.

Allow to ferment until fermentation ceases (check with hydrometer); airlocks should bubble less than once every thirty seconds.

Rack into clean fermenter.

Add 400g dark brown sugar, stir well.

Bottle, allow to mature for 3 months.

Serve cool (not chilled).
