It is my understanding that the cracker becomes the actual body of Christ when the priest blesses it. I asked many years ago because when I went to a Christmas they firmly requested that non-Catholics not partake in taking communion. The stance being that if you believe it is only a symbolic gesture they do not want you participating. Over the years this viewpoint has been confirmed by various other Catholics. So, I can't say I'm too surprised by the reaction.
