There's a bit of your brain that 'guesstimates' what colour a surface is, taking into account the lighting (and probably prior knowledge?). You know how you can sort of guess what colour things are even in bad or non-white light? That. So the V4 neurons present to any downstream neurons a picture of 'what we think this looks like in white light', which is then used for parsing the image.

WARNING! I haven't ever followed a single course covering neurology directly or indirectly. I'm merely saying something that seems plausible based on your post – it may well be utterly wrong, and I mean utterly.
