I made a chinese dish with chicken in a black bean sauce. I added baby asparagus cut into about 1" lengths just at the end - long enough to heat them through, but still quite crisp. He kept asking what the veg was, and I told him I'd tell him when we finished eating. When I told him, he couldn't believe it was asparagus. His mother always cooked it until it had the same flavour and texture as canned asparagus (eeeeewwwwww!).

After that, he was much more open to trying just about anything. Still doesn't like scallops (which I love) or brussels sprouts (no loss, as far as I'm concerned).
