it can only occur under very exacting conditions, and finding the fossils so they can be added to our fossil record is very hit and miss.

I was once told there are only 3 vaguely complete T-rex skeletons. (and a lot of plaster copies)

In order to be preserved, an animal has to be numerous, inhabit the right type of area, and do so for long enough that a number of specimens get preserved.
Then someone has to find one.

It is not surprising that whole families of species would be missed. it is even less surprising that any intermediate species, which might exist for only a brief period of time would be completely undetectable.
