FET's have (for these intents and purposes) 2 distinct defined states, with the addition of a third mid-level state you would require significantly higher currents (a FET, or any transistor for that matter burns the most energy when it is not either completely off or saturated) it would also increase complexity in so far as you would have to provide a mechanism to sense the midlevel, it is effectively an analog value.

On magnetic media however you are correct, if you could build a device which could reliably push the magnetic fields in the particular domain either completely one way, completely the other or neutral RELIABLY (this is the key thing here) it is feasable, currently the heads just "push" or "pull" the field in the domain as far as they possibly can.
