the creation. It comes down to finding additional evidence after the hypothesis is set down. "Let's see... if $HYPOTHESIS_X is true, then between the $FOO layer and the $BAR layer, we should find transitional fossils, with the traits of $SPECIES_X and $SPECIES_Y." Then they go look between the $FOO layer and the $BAR layer, and lo and behold, they find transitional fossils. It's not "proof", but each experiment of its kind lends support to the theory of evolution.
