That's to keep the juices in.

I learned this in the first cookbook I ever read called, "Look! I can Cook!" which was written for first grade children.

You need to add potatoes and carrots to even out the flavors and add starches to the broth so that you have a stew and not a soup.

The amount of spices you added to the stew will have evaporated by the time it is done. Add some whole garlic cloves or shallots. Black pepper is a perrenial favorite. I would advise against tomatoes. A nice addition would be either cilantro or saffron, but not both. One or the other.

When I get done almalgamating the UF cookbook, one of the recipes in there will be PA Dutch potpie. Which is sort of like stew with dumplings, but also vastly different.
