'superbugs' come about. The mice that for one reason or another don't like the bait will survive. Eventually all mice in a specific location will be descended from those who survived - just because they did not like the bait.

Fortunately genetic learning is a very slow process taking hundreds of generations. You'll probably have gotten rid of the mice before they become established enough to make genetic learning significant.
