Ultimate easy mead for first timers.
Heat up about 15 liters (4 gallons) of spring water to just below boiling.
Add 4 liters unpasteurized honey
keep just below boiling for 5 minutes.
Add juice of 1/2 lemon
Whip the white of one egg with a few teaspoons of cold water, and stir into the mix.
Pour into a clean 20 liter bucket (I said clean and I mean VERY clean) or primary fermenting jug with water valve, if you have one.
Let mead mix cool down to about 40 degrees C.
Stir in two pouches of yeast (if using dry yeast, mix with warm water according to pouch instructions.
Cover with a linen towel and tie into place.
If using cloth covered bucket, Let sit for four weeks in a dark warm place. (Back of a closet) then siphon into 2 liter plastic soda bottles (also very clean) and move to a place where they will not be disturbed.
IMPORTANT: Every day WITHOUT FAIL loosen the lids a little to let the CO2 out so the bottles don't explode.
At the end of 6 months, you'll have a dozen bottles of mead with 3 inches of sludge in the bottom. Carefully siphon out the mead. leaving the sludge to be washed out by your SO.
The mead can have an alcohol content of between 7% and 15% and will have a doughy, sweet taste to it, it will also be lightly carbonated like a sparkling wine.

If you have all the fancy wine making equipment, and a beer/wine making store near you, pick up a few pouches of champagne yeast. you can get a better alcohol content, and less of the doughy flavour.

I have other recipes, but they are boxed up until Ikea gets in the shelves I need to unpack more stuff.
