They have a bunch of variations - basic bread stuffing, apple stuffing, sausage stuffing, etc.

I combine the three :-)

I made a larger batch than normal, but this is what I normally use:

2 cups fresh soft bread crumbs (I cube the bread, about 1/4" cubes)
1/2 cup celery, chopped
1/4 cup onion, chopped
2 cups finely chopped apples
1/3 lb pork sausage
1/8 tsp pepper
1 tsp sage
1/2 tsp salt

Crumbs in large bowl.
Fry crumbled sausage, remove. Saute celery and onions in the fat.
Put sausage, onions, celery, apples, seasonings in bowl, mix. If too dry, add a bit of water.
Pack into a casserole dish, cover, bake with the turkey (350F is fine) for 1.5-2 hours. Take cover off for final 15-20 mins to dry it out a bit. (If it's gettng too dry while cooking, or if you just want to do this... add some of the turkey drippings for even more flavour, or add a bit of water.)

You have to leave the cover off for the last bit to dry it out more, because it is somewhat wet (depends a lot on the sausage and the apples). Didn't notice it being very greasy.
