speed of the drives, your processing power on the machine, how many drives, access speed (like bus speeds, or going over a USB connection).
when I'm recovering, I normally tell people I'll create a log to verify the times (or they can come in and look if they want), but it'll be $x for the recovery, plus $y per day for tying up a system to recover it.
Oh, and you'll need a drive/array of the same size or larger to write the data to. they can provide this for you, or you can charge them for it, or if you have the space, just use it as temp storage.
I find it's easier to have them give you a drive, because then you can restore it straight to the new drives for them, and they're done.
