thinking I'll try it this time. Also, you have to take the temperature of the stuffing as well as the bird - Bird should be a minimum of 180F, while the stuffing needs to be about 160F to be safe - so no real problem as long as you don't let the stuffing cool in the the bird for any length of time after roasting.
