time and dries the turkey. He does, however, provide a recipe for stuffing in which you heat the stuffing before putting it into the bird. That way the cooking time remains similar to an unstuffed bird. I like my recipe better, though, and my turkey is never dry anyway, so I'm not sure what his problem was.
