Your daughters will likely find the Magic Kingdom most to their liking, particularly if they're fascinated by princesses.
Your nieces are more likely to enjoy non-Disney entertainment (Universal, for instance, is aimed more at teens). Sticking with Disney parks: if they're particularly mature, they may find Epcot a fun park; it's not oriented toward thrills, but it's very 'deep'. It's my favorite park. There are a few good thrill rides, though: you need to ride Soarin' at least once. It's worth the wait, believe me.
The other two major WDW parks ("Disney's Hollywood Studios", nee Disney-MGM Studios, and "Disney's Animal Kingdom") would depend on your tastes. November is likely to be cool enough to find Animal Kingdom bearable; I avoid it during summer months, since it tends to be much hotter than the other parks.
All four of them will probably enjoy DisneyQuest; it has attractions meant for all ages. You could probably leave them there for most of the night, while you and your SO go over to Pleasure Island. I've heard good things about the Cirque du Soleil show (next door to DisneyQuest) and the House of Blues (across the way) but haven't been to either.
