1. Try staying upright on a bike while going at a moderate speed.
2. Try staying upright on a bike while standing still (without anything but the tires touching the ground of course!)

Thought experiment:
3. Try staying upright on a bike that's standing still on a (horizontal) conveyor belt. Does it most resemble experiment 1 or 2?

The only noticeable difference for you, sitting on the bike, between 1 and 3 is the rotating wheels. I think that's a clear indication gyroscopic effects *do* come into play.
