  It could be a gluten/over mixing issue by Imp 2007-07-25 07:44:25
try to stir as slow as you can, what may be happening is that you are causing the gluten to bunch to much which will make the sauce super thick. I would say that when you go to add the other cheeses, add them, but let them melt on their own for a few minutes with an occasional stir.
