Every part of your guitar counts towards the total resonance, even in an electric guitar.

You are best off buying one from the origional manufacturer.

There are no electrical concerns: the strings aren't electrified, only the pickups are. If you do choose to go with metal: DON'T GROUND IT! The only way for electricity to get through you, assuming the strings are compromised would be through your hand. Remember your 3rd grade science: electricity needs a full circuit. The metal scratchplate would at most be a storage place for static electricity, not a conductor - unless you ground it.
