Invoke(UFicle->food:soups/wine) by Phoon 2007-07-09 00:39:43
I was watching the Good Eats episode "Say Cheese" and saw his recipe for cheese soup; I figured I'd try it.

The only problems I can see are these:

1. I don't have Marsala wine, and I can't buy it after 2AM. I do, however, have a glassful or two of Port wine. What adjustments would I need to make to the rest of the recipe if I substitute in the Port? (The recipe only calls for a tablespoon or so of wine.)

2. I can't get hold of Fontina cheese. Which varieties of cheese would work? (I have a big bag of "4 Cheese Mexican" in the fridge; it's Monterey Jack, Cheddar, Queso Quesadilla, and Asadero. Will that work?)

Another thing I've been wanting to try is this: Cheddar Cheese Soup, a la Disney. I've had it at Epcot. It's excellent. But it calls for 1/2 cup of ale, which I am also unable to acquire after 2AM. I don't have anything of the beer/ale/lager persuasion to substitute for it, either. Are there any nonalcoholic substitutes, or should I wait until later to try it?

Now that I look at it, the two recipes are very similar... sweat mirepoix, add chicken stock, simmer, blend, melt in cheese...
