What I typically do when pairing chicken with risotto is the following. Thank esbita for this one, since she inspired this dish. In a 10" skillet, sauté sliced mushrooms and diced onions in white wine with a bit of garlic and butter on medium-high heat. Once the mushrooms and onions are cooked, add the chicken breasts. Turn the chicken every so often until brown on both sides, the middle turns white and the juices run clear.
