When I said 'properly aged' I knew something was amiss.

http://en.wikipedia.org/wiki/Colby_cheese says as I thought that colby is not supposed to be aged.

The reason colby cheese like I grew up with is so difficult to find out here is because the local (budget) cheese makers do not package it in a waxy rhind style packaging, instead a cellophane style plastic seal... That causes the whole texture of the colby to become nearly velveeta-like and more like a cheddar, then the small grape-nuts sized and shaped clusters that it is supposed to become during the storing and shipping process inside the wax rhind like packaging.

I bought some 'gourmet' colby cheese from harris teeter just a half hour ago and it's packaging jogged my memory as to the very unusual waxy rhind style packaging I had forgotten enveloping all the colby cheese I used to eat when growing up and before I moved out of the area I grew up in. It seems the (budget) cheese manufacturers here don't sell much colby because people don't like it, of course they don't if you mishandle and mispackage it!
