always process the jars for about 20 minutes once sealed. No bug escapes - or at least hasn't yet. I've been making jams since I was nine years old, so lots of practice! In a couple of weeks, it will be time to make the raspberry juice for my blackberry-raspberry jelly. I'll make that in late July when the blackberries are ripe. And then in early fall, I make peach-orange marmalade. They make a lovely gift set - red strawberry jam, deep purple blackberry jam and golden marmalade.
