Like Mid-Ohio Sports Car Course. They have various different schools, including an adult defensive driving school. You could convince her it's a performance course :-) which is not entirely inaccurate, as the cirriculum includes emergency lane change/collision avoidance, wet braking drill, physics and dynamics of good driving, and ice/rain/show skid car drill.
Maybe make it out as a refresher, sign up both of you, and make a weekend out of it. Plus you get the beat the crap out of someone else's Honda Civic.
