The question comes down to why people use IE.

If it's "It's published by a big company so it has to be good", then Safari might dislodge IE. I hope this is the rationale in corporate settings.

If it's "It came with Windows", then nothing will dislodge IE. And this is where most home users sit.

And most people with Firefox are probably willing to try Safari, so it'll likely win quite a few converts. (I personally prefer Firefox, even on my Mac, but Safari 3 sounds like it's worth another try.)
