It allows you to do whatever you want. It helps you in that. But it also helps you deciding if you are unsure. It doesn't say "I'll install Gnome. If you want other, you'll have to do X, Y and Z". It says "what do you want to install? I have X, Y and Z", and in the "easy (networkless) installation" it just installs Gnome which is on the LiveCD.
