Or writing, putting in an envelope and sending off (throwing into mailbox or turning it in at the post office) those certified letters. If they may be unavailable for court time and to have it on paper, you can also let your witness(es) make [a] written statement(s) about that. You can also fax a copy of the letter - print the sending journal (to prove it was sent on your side and received on the recipient's side without obvious errors). Check on their financial status if possible to decide for a strategy, if need be. No sense in suing for money that isn't there, but maybe there is company or private property worth to destrain.
