reset config to factory defaults,
manually reconfigure to your specs,
upload config to tftp server (back it up),
reset and see if it again trashes the config.

If THAT works, you had a corrupt config that was making it past the save/upload/download routine and being exposed (and wrecked) in the boot process. We had a Sonicwall that was doing something like that. A manual reconfig corrected it. Talk about a PITA.
