I tend to give different addresses on each web site so that I can easily filter based on source and block anyone who starts to send me spam.
It also gives a very good phishing detection method. e.g. If I get an email telling me that my ebay account has been hacked and I need to log in and it's sent to amazon at $domain then it's fairly safe to ignore it.

Right now I run an exclusionary system rather than an inclusionary one.
There is a single catch all address. A few addresses which get spam are either blocked or filter into the catch all after going through some very aggressive spam filtering (e.g. postmaster and webmaster at $domain both do that since they get spam but I don't want to completely block them)

I would prefer to avoid heavily filtering all email because of the risk of false positives. Which leaves me with the option of setting up mail boxes for all the addresses I do want to use, all of which forward into one account and then run a separate catch all with heavy filtering which I check less often or just ignore.

It's just going to be a pain having to go though and set up all the valid addresses and then I'll have the added maintenance of having to add any new addresses as they come up.
