Since you're making a list of phrases (names/roles), and the phrases contain commas, you have to use semicolons (and no comma after the last item):

"We would like to thank our Wedding Coordinator, Norma Pope; Entertainment Director Caroline Carr; and Piper Evan Kolher-Camp for helping to make this day so special.
