FAT drivers have had well over a decade to have the bugs ironed out, and they have public specs to work off of. The process leading to ntfs-3g has only been a few years long, during most of which it didn't work at all, and there's no spec to compare to besides reverse engineering. NTFS is also a hundred times more complicated, and ntfs-3g admits to still being incomplete. And when used in this role, NTFS provides almost no benefit over FAT anyway. I'd use ntfs-3g in a last-ditch system recovery role, but I don't see why, given a simple choice, you would subject your data to it.
