The most important thing is respect. Respect their beliefs. They're probably good people and will respect yours. Keep in mind that you don't owe them anything. They helped you. You offered to pay, but they refused. The best you can do is offer polite interest and explain rationally why you don't wish to join their church. They could never interpret that as rudeness.
