When you open a .torrent with µTorrent, it presents you with a list of the file it will download, each with a checkbox next to them, so you can (un)tick whichever file you (don't) want. You can do the same for a download already in progress by right clicking on the file in the files tab and set the priority to "skip".

Sounds a bit strange when I describe it like this, but it's fairly self-explanatory when you see the UI.
