From the people who built BBEdit. Free, fully functional, not sure about OSS (but I think it is). http://www.barebones.com/products/textwrangler/
It's got a list of programming languages that's rather impressive. I haven't had a need for SFTP/SSH but it does do SFTP at least.
It also has command line tools that you can install.
