boiling. Sometimes a very clean smooth container lets the water heat so evenly that a large part vaporizes suddenly blowing most of the water out of said container. Or even worse, the water can superheat without coming to a boil, and when you move the container, the motion causes it to boil suddenly and splash out of the container onto your hand causing an owie!

I have had that happen when heating a cup of water to make tea. Now I try to follow Alton Brown's recommendation to stand a bamboo skewer in the cup before heating. Works great!
