It is a long slow process, as you will be capturing the video in real time. Some systems that capture audio and video separately have problems Keeping the audio synced with the video.
Adding Chapters and menus can be easily done with any story board type software (Pinnacle Studio, Ulead Video Studio, etc) but again you will want to have lots of free time to set things up. Rendering to DVD can also be time consuming. I find it is best to start just before I go to bed, then it is usually done, or close to done by the time that morning rolls around.
BACK UP YOUR FILES as soon as you have captured them. Work from you one copy and keep the other safe in it's raw form. Mistakes are easy to make especially when you have been at it for several days on end.
